Wednesday - Grey and gloomy

My alarm woke me up this morning as usual. It was quite dark this morning which surprised me. I got up, went downstairs, came back up and watched the news from the bed. As usual, I ended up snoozing, but I did have a text conversation with F.

When I got up finally, I did a couple of loads of laundry and tried to get motivated to do other things! I was having a really draggy day again. I watched some YouTube and then went downstairs for lunch. I grabbed my lunch and then gave K the leftovers from yesterday. She was happy.

While I was eating I watched the early morning news and then an episode of The Walking Dead. It was a good one and nobody died, except for a horse.

F called fairly early this evening to say he was on his way back. I went downstairs and did my dishes, but I also started prepping a few things. Tonight I made quesadillas using the leftover taco mix and some tuna. They turned out okay. I tried to be clever and keep them warm in the toaster oven, but they got soggy so I had to try and refry them. I was a bit disappointed.  I did do a dessert quesadilla too, with chocolate spread and some nut butter. It was really nice.

I got the dishes done and then came upstairs. I relaxed for a while, and around 10 I did the garbage run and then took a shower. I came back upstairs and watched Shameless.

That’s about it for my night. Not sure what I’ll get up to tomorrow. I’d like to work some more on my column and maybe watch something in preparation for the Academy Awards ceremony! Maybe.

Come back later if you like and hear all about my day. Until tomorrow….

Hi Helen!

Good on you for making quesadillas! They are a staple around here at certain times of the year. I've also never found a way to keep them warm or reheat them without their losing their crispness, but if you figure out how to do it, please share! The dessert and tuna quesadillas sound intriguing. I've only ever used things like cheddar cheese, green chile and chicken in mine. Did you use canned tuna or tuna with mayo?

Hi there!

I used canned tuna. It was canned in oil so I drained as much as I could from it before we got started. The last time I made quesadillas I did use tuna and mayo, but didn't use any this time. I used some shredded cheese from the store with ours. I have to be a little careful of K, she's fairly good with a bit of spice, but I don't want to push it.

The "dessert" one turned out okay too. I got the idea from putting chocolate spread in a gyoza wrapper and frying that. It was darn nice!

As always, thanks for visiting :-)
